Jones' stroke definitely looks more disciplined -- he really gets the most length, above the water, out of each stroke as possible. Very similar to Dara Torres' stroke. Phelps and Takeuchi almost seem to cut their stroke off early with an early hand entry, and don't look as controlled or polished.
Then again, there's only so much you can tell with an above-the-water view.
